Coconut Milk Chia Pudding
Chia seeds are an excellent source of protein, fiber, and Omega-3 Fatty Acids; all good benefits for health. Pair those good benefits with the benefits from the Goodness of the Coconut and you have a healthy, sweet, and creamy treat. Our Coconut Milk Chia Pudding recipe uses CocoGoodsCo Lite Coconut Milk and is enjoyable as-is, or layer with compote or fresh fruit!

- 1 1/2 cups of CocoGoodsCo Lite Coconut Milk
- 1/2 cup Chia Seeds
- 1-2 Tbsp maple syrup
- 1 tsp vanilla extract
- To a mixing bowl add coconut milk, chia seeds, maple syrup (to taste), and vanilla. Whisk to combine.
- Cover and refrigerate overnight (or at least 6 hours). The chia pudding should be thick and creamy. If not, add more chia seeds, stir, and refrigerate for another hour or so.
- Enjoy as-is, or layer with compote or fresh fruit! Will keep covered in the refrigerator for up to 5 days.
