Vegan & Gluten Free Cheesecake Filling

Ingredients

  • 1 cup of Cocogoods Co. Organic Coconut Flour
  • 1/2 cup of Cocogoods Co. Organic Coconut cream
  • 8 ounces of vegan cream cheese (Trader Joe's brand, or Toffuti)
  • 1 tsp of pure vanilla extract
  • 2/3 cup of maple syrup (plus more to taste)
  • 1 Tbsp of Cocogoods Co. Organic Coconut Oil (for extra creaminess)
  • 2 tsp lemon zest
  • 1-2 Tbsp lemon juice (plus more to taste)
  • 1/8 tsp sea salt
  • 3/4 cup gluten-free rolled oats
  • 3/4 cup of Cocogoods Co. Organic Coconut Chips
  • 1/4 tsp sea salt
  • 4 Tbsp of Cocogoods Co. Organic Coconut Oil (melted)

Directions

Divider Line
  1. Crust: Mix the following ingredients together in a big bowl: * Gluten-free Rolled Oats * Organic Coconut Chips * Sea Salt
  2. For filling Blend all the ingredients together until consistency. Transfer mixture to coconut oil coated loaf pan and spread evenly to distribute them Carefully and add filling on top of the crust. Put in the preheated oven (375 F (190 C)) for 35min.
