Desiccated coconut is used commonly in various industries like confectionery and bakery products, frozen foods, food service, and consumer products. It is prepared and preserved by removing the natural moisture in the fruit. It usually contains about 3% of moisture and is produced from the white part of fresh, mature coconut kernel.
Desiccated Coconut is graded by its cutting size including fine/ macaroon, medium, flakes, shredded and chips/ ribbon.
Sweetened coconut is generally used in sweet recipes, like cakes and cookies, while unsweetened coconut is generally used in savory recipes, like curries and granola. A cake that calls for sweetened coconut will be very different in both texture and flavor if made with unsweetened coconut. By contrast, a curry recipe that calls for unsweetened shredded coconut will taste strangely sweet if you use sweetened.
