Ingredients
For the Chicken and Rice:
✅ 4 Boneless, Skinless Chicken Thighs (approx. 1.5 lbs/700g)
✅ 2 tablespoons CocoGoodsCo Organic Refined Coconut Oil
✅ half a cup of CocoGoodsCo Organic Coconut Cream
✅ 1 small onion, finely chopped
✅ 1 tsp minced ginger
✅ 1 cup Uncooked Long-Grain White Rice (rinsed)
✅ 3/4 cup Chicken Broth or Water
✅ 1 small piece of ginger (about 1/2 inch), minced
✅ 2-3 cloves garlic, minced
✅ Salt and pepper, to taste
✅ 2 tbsp CocoGoodsCo Unsweetened Desiccated Coconut (Fine Macaroon style, for topping)
For Garnish and Serving (Thanksgiving Vibe):
✅ Fresh scallions
✅ Fresh Lime
✅ Optional Thanksgiving Garnish: Chopped toasted pecans or walnuts, and a sprinkle of fresh Sage or Thyme leaves.
Directions
Prep and Sear the Chicken:
✅ Preheat oven to 400°F (205°C). Season the chicken thighs generously with salt and pepper.
✅ Heat the coconut oil in a cast-iron pot or Dutch oven (oven-safe pot) over medium-high heat.
✅ Place the chicken thighs in the hot oil. Sear for 3-4 minutes per side until deeply golden brown. Remove the chicken from the pot and set aside.
Sauté the Aromatics:
✅ Lower the heat to medium. Add the chopped onion, minced garlic, and minced ginger (if using) to the pot, scraping up any browned bits from the chicken. Sauté for 3-5 minutes until the onion is translucent.
Mix the Coconut Base:
✅ Pour the entire can of CocoGoodsCo Organic Coconut Cream into the pot. Stir well to combine with the aromatics.
✅ Add the rinsed rice and the chicken broth/water. Stir once or twice to combine. Season the rice mixture with salt and pepper.
Assemble and Top:
✅ Nestle the pre-seared chicken thighs back into the rice mixture (skin-side up, if applicable).
✅ Sprinkle the 2 tablespoons of CocoGoodsCo Unsweetened Desiccated Coconut over the top of the chicken and rice, followed by a final sprinkle of black pepper.
Bake:
✅ Cover the pot tightly with a lid (or aluminum foil).
✅ Transfer the pot to the preheated oven and bake for 15-20 minutes, or until all the liquid has been absorbed and the rice is fully cooked.
Garnish and Serve:
✅ Remove the pot from the oven. Let it rest, covered, for 5 minutes.
✅ Before serving, garnish generously with fresh chopped scallions and squeeze fresh lime juice over the dish for a bright, refreshing finish. For Thanksgiving, don't forget the toasted pecans and fresh herbs (Sage/Thyme) for that classic fall aroma!
