COCONUT CURRY WITH MEATBALLS

Ingredients
For the Meatballs:
✅ 250g ground meat
✅ 1 garlic clove, minced
✅ 1 tsp fresh ginger, grated
✅ 1 tbsp fresh coriander (cilantro), finely chopped
✅ 1 tsp red curry paste
✅ 1 tsp salt
✅ 2 white egg
✅ pepper
✅ CocoGoodsCo Organic Refined Coconut Oil (for frying meatballs)
For the Curry Soup:
✅ 1/2 White onion, chopped
✅ 1/2 Red bell pepper, sliced into bite-sized pieces
✅ 500ml Chicken or vegetable stock
✅ 1 can (13.5 oz/400ml) CocoGoodsCo Organic Coconut Milk
✅ 1 tbsp red curry paste
✅ Garnish: Fresh coriander leaves, lime wedges, and sliced red chili
Directions
Step 1: Form the Meatballs
✅ In a mixing bowl, combine the ground meat, minced garlic, grated ginger, chopped coriander, and a pinch of pepper.
✅ Mix well and roll into small meatballs (about 3cm in diameter).
Step 2: Sear the Meatballs
✅ Add the meatballs and sear until golden brown on all sides (they don't need to be cooked through yet).
✅ Remove the meatballs and set aside.
Step 3: Sauté the Aromatics & Veggies
✅ In the same pan, add the chopped onion and red bell pepper.
✅ Sauté for 2–3 minutes until softened.
✅ Stir in the red curry paste and cook for another minute until fragrant.
Step 4: Build the Soup Base
✅ Pour in the chicken stock and CocoGoodsCo Organic Coconut Milk.
✅ Add the seasoning (optional).
✅ Bring the mixture to a gentle simmer.
Step 5: Simmer to Perfection
✅ Carefully add the seared meatballs back into the soup.
✅ Let it simmer for 8–10 minutes until the meatballs are cooked through and the flavors have melded together.
Step 6: Serve
✅ Ladle the hot soup and meatballs into rice bowls.
✅ Top with fresh coriander leaves or any ingredients to garnish.
