COCONUT LIME CHICKEN

Ingredients

โœ… 3 chicken breasts
โœ… 2 tbsp CocoGoodsCo Organic Refined Coconut Oil, divided
โœ… 1/2 cup CocoGoodsCo Organic Coconut Cream
โœ… 1 tbsp cornstarch (or flour)
โœ… Salt and black pepper to taste
โœ… 1/4 cup minced onion/garlic
โœ… 1/4 cup fresh lime juice
โœ… 1/2 tsp paprika powder
โœ… 1 tbsp brown-sugar
โœ… 2 tbsp fresh cilantro or parsley, chopped
โœ… Lime wedges for garnish

Directions

Prepare the Chicken: 
โœ… On a plate, mix the cornstarch, garlic powder, onion powder, salt, and black pepper. 
โœ… Lightly coat the chicken breasts in this mixture.


Sear the Chicken: 
โœ… In a large pan, heat 1 tablespoon of CocoGoodsCo Organic Refined Coconut Oil over medium-high heat. 
โœ… Add the coated chicken pieces and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the pan and set it aside.


Make the Sauce: 
โœ… In the same pan, reduce the heat to medium.
โœ… Add the remaining 1 tablespoon of CocoGoodsCo Organic Refined Coconut Oil. 
โœ… Sauté the minced onion until fragrant.


Create the Coconut Sauce: 
โœ… In a separate bowl, whisk together the CocoGoodsCo Organic Coconut Cream, fresh lime juice, peprika powder, and brown-sugar powder. 
โœ… Pour this mixture into the pan with the onions. 
โœ… Stir well, scraping the bottom of the pan to get all the savory bits.


Combine and Simmer: 
โœ… Return the seared chicken to the pan, nestling the pieces into the sauce. 
โœ… Simmer for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened slightly.


Garnish and Serve: 
โœ… Remove the pan from the heat. 
โœ… Stir in the fresh cilantro or parsley. 
โœ… Garnish with fresh lime wedges and a final sprinkle of black pepper before serving.
