Ingredients

3 chicken breasts

2 tbsp CocoGoodsCo Organic Refined Coconut Oil, divided

1/2 cup CocoGoodsCo Organic Coconut Cream
โ
1 tbsp cornstarch (or flour)
โ
Salt and black pepper to taste
โ
1/4 cup minced onion/garlic
โ
1/4 cup fresh lime juice
โ
1/2 tsp paprika powder
โ
1 tbsp brown-sugar
โ
2 tbsp fresh cilantro or parsley, chopped
โ
Lime wedges for garnish
Directions
Prepare the Chicken:

On a plate, mix the cornstarch, garlic powder, onion powder, salt, and black pepper.

Lightly coat the chicken breasts in this mixture.
Sear the Chicken:

In a large pan, heat 1 tablespoon of CocoGoodsCo Organic Refined Coconut Oil over medium-high heat.

Add the coated chicken pieces and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the pan and set it aside.
Make the Sauce:

In the same pan, reduce the heat to medium.

Add the remaining 1 tablespoon of CocoGoodsCo Organic Refined Coconut Oil.

Sauté the minced onion until fragrant.
Create the Coconut Sauce:

In a separate bowl, whisk together the CocoGoodsCo Organic Coconut Cream, fresh lime juice, peprika powder, and brown-sugar powder.

Pour this mixture into the pan with the onions.

Stir well, scraping the bottom of the pan to get all the savory bits.
Combine and Simmer:

Return the seared chicken to the pan, nestling the pieces into the sauce.

Simmer for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
Garnish and Serve:

Remove the pan from the heat.

Stir in the fresh cilantro or parsley.
