DISH OF THE MONTH - COCONUT MILK CEVICHE
🥥 This month, we're bringing you a taste of the tropics with our zesty Coconut Milk Ceviche!
🍋 Dive into our Coconut Milk Ceviche, a creamy and flavorful twist on the classic, made with the richness of CocoGoodsCo Coconut Milk. It's a taste of tropical paradise from Mexico!
🍴 Ingredients:
👌 1 lb fresh, firm white fish (such as mahi-mahi, snapper, or halibut), cut into 1/2-inch cubes
👌 1 (13.5 oz) can CocoGoodsCo Coconut Milk (chilled)
👌 1/2 cup fresh lime juice (about 4-6 limes)
👌 1/2 thinly sliced red onion
👌 1 jalapeño pepper, seeded and finely chopped (adjust to your spice preference)
👌 1 diced red bell pepper and cucumber
👌 1/2 cup chopped fresh cilantro,
👌 1 diced avocado
👌 Salt and pepper to taste
👩🍳 Instructions:
🍲 Marinate the Fish: In a glass bowl, combine the cubed fish, water and lime juice. Ensure the fish is fully submerged.
🍲 Refrigerate: Cover the bowl and refrigerate for at least 30 minutes to 1 hour, or until the fish is opaque and firm.
🍲 Add Coconut Milk: Gently stir in the chilled CocoGoodsCo Coconut Milk.
🍲 Add Vegetables: Add the red onion, jalapeño, red bell pepper, and cilantro to the marinated fish. Gently mix everything together.
🍲 Season: Season with salt and pepper to taste.
🍲 Serve: Serve immediately, garnished with diced avocado and optional cucumber.
