Ingredients
For the Soup:
✅ 2-3 medium Yellow Potatoes, peeled and diced into small cubes
✅ 1/2 medium Onion, finely diced
✅ 1 box (16.9 fl oz / 500ml) CocoGoodsCo Organic Coconut Creamer (Unsweetened)
✅ 2-3 slices Bacon, chopped
✅ Salt and Black Pepper to taste
For Garnish and Serving (Christmas Vibe):
✅ Baked Bread
✅ Fresh Parsley or Thyme
✅ Dried Herbs for sprinkling (optional)
Directions
Sauté Aromatics:
✅ Add the diced onion to the pot with the remaining fat. Sauté for 3-5 minutes until the onion is soft and translucent.
Crisp the Bacon:
✅ Place the chopped bacon in a pot or pan over medium heat. Render the fat and cook until the bacon is fully crispy.
✅ Remove the crispy bacon and set it aside on a paper towel to drain. Leave a small amount of rendered bacon fat in the pot to sauté the onion.
Cook the Potatoes:
✅ Add the diced potatoes to the pot. Stir for about 1 minute.
✅ Once the potatoes are soft, slowly pour the entire box of CocoGoodsCo Organic Coconut Creamer into the pot. Stir gently.
✅ Season with salt, black pepper, and the pinch of nutmeg/white pepper. Simmer for another 2-3 minutes to warm the soup evenly; do not bring to a rapid boil.
Blend to Perfection:
✅ Turn off the heat. Use an immersion blender to puree the soup until it achieves a smooth, velvety consistency.
(If you don't have an immersion blender, carefully transfer the soup to a regular blender and blend until smooth. Be cautious when blending hot liquids)
Garnish and Serve:
✅ Ladle the hot soup into bowls.
✅ Garnish with the crispy bacon bits and toasted bread/croûtons.
✅ Finish by sprinkling a little dried herb mix and placing a small sprig of fresh Parsley or Thyme in the center for that festive Christmas look.
