RED VELVET COCONUT DONUTS

Ingredients

For the Red Velvet Batter:

✅ ¼ cup CocoGoodsCo Extra Virgin Coconut Oil (melted)

✅ ½ cup CocoGoodsCo Organic Coconut Milk

✅ 1 ¼ cups All-purpose flour

✅ ⅔ cup sugar

✅ 1 tbsp cocoa powder

✅ ½ tsp Baking soda

✅ ¼ tsp Salt

✅ 1 Large egg (room temperature)

✅ 1 tsp Vanilla extract

✅ 1 – 2 tsp Red food coloring (adjust for desired brightness)


For the Coconut Cream Cheese Frosting:

✅ 4 oz Cream cheese (softened)

✅ 2 tbsp butter (softened)

✅ 1 ½ cups Powdered sugar

✅ 1 – 2 tbsp CocoGoodsCo Organic Coconut Milk (to reach desired consistency)

✅ 1 tsp Vanilla extract

✅ CocoGoodsCo Desiccated Coconut (for topping)

Step 1: Prep the Oven and Pans

✅ Preheat your oven to 350°F (175°C). Lightly grease your donut pans with a little bit of CocoGoodsCo Coconut Oil to ensure easy removal.

Step 2: Mix the Batter

✅ In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.

✅ In a separate measuring cup, combine the CocoGoodsCo Coconut Milk, vinegar, melted Coconut Oil, egg, vanilla extract, and red food coloring. Whisk until smooth.

✅ Slowly pour the wet ingredients into the dry ingredients. Stir gently until just combined - do not overmix, or the donuts will be tough!

Step 3: Bake

✅ Pipe or spoon the batter into the donut pans, filling each cavity about 2/3 full. 

✅ Bake for 10–12 minutes or until a toothpick comes out clean. Let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Step 4: Make the Frosting

✅ While the donuts cool, beat the cream cheese and butter together until silky. 

✅ Gradually add the powdered sugar and coconut extract. 

✅ Stream in the CocoGoodsCo Coconut Milk one tablespoon at a time until the frosting is thick but spreadable.

Step 5: Decorate

✅ Dip the top of each cooled donut into the frosting. Immediately sprinkle generously with CocoGoodsCo Desiccated Coconut.

ALL-GOOD TIP: For an extra layer of flavor and crunch, lightly toast the desiccated coconut in a pan for 2 minutes before sprinkling it over the frosting!
