Ingredients
The Aromatics & Base:
✅ 2 tbsp CocoGoodsCo Refined Coconut Oil
✅ 1 medium onion (cut into crescent wedges)
✅ 4 cloves garlic (crushed)
✅ 2 red chillies (deseeded and finely chopped)
✅ fresh ginger (grated to a purée)
The Heart of the Stew:
✅ 1 can (13.5 oz/400ml) CocoGoodsCo Organic Coconut Cream
✅ 750ml Chicken stock
✅ 350g Pumpkin (peeled and cut into cubes)
✅ 150g potatoes (quartered)
✅ 400g raw prawns (shelled and deveined)
✅ 300g Baby spinach leaves
Seasoning & Serving:
✅ Salt and black pepper (to taste)
✅ 1-2 Limes (juiced, plus extra wedges for serving)
✅ Optional: Thinly sliced red chilli for garnish
Directions
Step 1: Sauté the Aromatics
✅ Heat the CocoGoodsCo Refined Coconut Oil in a heavy-bottomed pot over medium heat.
✅ Add the onion wedges and cook until soft and pale gold.
✅ Stir in the garlic, chopped chillies, and grated ginger.
✅ Cook for 2 more minutes until fragrant.
Step 2: Simmer the Broth
✅ Stir in the CocoGoodsCo Organic Coconut Cream and the stock.
✅ Season with a generous pinch of salt and black pepper.
✅ Bring to a gentle simmer, heating carefully — do not let it reach a rolling boil to ensure the coconut cream stays silky and smooth.
Step 3: Cook the Vegetables
✅ Add the pumpkin cubes and baby potatoes. Simmer gently until the vegetables are tender.
✅ Pro Tip: Use a wooden spoon to slightly squash a few pieces of the pumpkin against the side of the pot; this will naturally thicken the stew without breaking down the rest of the vegetables.
Step 4: Add the Prawns & Greens
✅ Stir in the raw prawns and baby spinach leaves. Cook gently for about 3 minutes until the prawns are opaque and pink.
Step 5: Balance the Flavors
✅ Stir in the lime juice (if needed).
✅ Taste the stew and adjust the seasoning with more salt and black pepper as needed to enhance the natural creaminess of the coconut.
Step 6: Serve
✅ Ladle the steaming stew into deep bowls.
✅ Top with sliced red chillies and serve immediately with fresh lime wedges on the side for an extra zing.
