DISH OF THE MONTH - LIGHT SUMMER SALAD

Here’s how to make our Light Summer Salad—your new favorite way to glow from the inside out:
🥄 Make the Dressing:
✔️ 1 tbsp CocoGoodsCo Virgin Coconut Oil
✔️ 1 tsp coconut aminos (or soy sauce)
✔️ 1 tsp apple cider vinegar
✔️ Juice of ½ lime
✔️ Pinch of sea salt
✨ If your coconut oil is solid, gently melt it using a double boiler or by placing the jar in warm water.
While the oil is still warm, whisk in the aminos, vinegar, lime juice, and salt until smooth. If it solidifies, rewarm and whisk again.
🥗 Make the Salad:
✔️ 2 cups kale or mixed greens
✔️ A handful of chopped macadamia nuts
✔️ Toasted CocoGoodsCo Coconut Chips
✔️ Optional: chive blossoms or edible flowers for garnish
👐 Massage the greens with the warm dressing until coated and slightly softened. Toss in macadamias. Let sit for 3–5 minutes so the oil slightly sets and flavors absorb. Top with coconut chips and blossoms.
