Ingredients
For the Salad:

2 cans (5 oz/140g each) Tuna in water, drained

1/2 head of Salad

1/4 cup Red Onion, sliced

1/2 Avocado, diced
β
Microgreens
The Coconut Dressing:

2 tbsp CocoGoodsCo Extra Virgin Coconut Oil

1 tbsp Mayonnaise

1 tsp Whole Grain Mustard

Salt and Black Pepper to taste

1 tsp Chilli Sauce

A pinch of Dried Chili Flakes (for a little kick)

Directions
Prepare the Dressing:
In a small bowl, whisk together the CocoGoodsCo Extra Virgin Coconut Oil, mayonnaise, whole grain mustard, chili sauce, and dried chili. Season with salt and pepper.
Note: If your coconut oil is solid, gently warm it until just melted before mixing.
Combine the Salad Base:
In a medium mixing bowl, flake the drained tuna with a fork. Add the salad, microgreens, tomato, corn, and onion.
Toss with Dressing:
